NEW Recipe: BBQ Grilled Chicken & Veggies Mixed Greenz Salad

When it comes to salad, there is so much you can do. Here is a salad that that takes about 20 minutes to prepare and makes a perfect meal any day of the week.

BBQ Grilled Chicken & Veggies Mixed Greenz Salad

Ingredients:

• 1/4 lb. mixed greens

• 1/2 red bell pepper (diced)

• 1/4 small zucchini (diced)

• 1/4 medium avocado, sliced

• 2 grilled chicken strips, in BBQ marinade

• 1 hard boiled egg, halved

Dressing: (Just a drizzle)

• olive oil

• Balsamic Vinegar

• Salt & Pepper & Cilantro (optional)

Tossing the greens into a bowl, I grill the chicken while I am chopping the items and boiling the egg. You can buy prepared grilled chicken and hardboiled eggs on your own to make it a quicker process, but you may be better off preparing it yourself. When the egg is done, I cool it in cold water and slice the finished grilled chicken. Combine the chopped veggies with the green and place the egg halves on top. Garnish with the avocado slices and cilantro. Add a small amount of dressing. Any type of chicken and dressing can be used; whatever is your preference. If you are vegetarian/vegan, grilled tofu or a portabella mushroom cap is great! Whatever choices are made, I find this to be a very substantial and energizing meal that prevents me from binging or becoming hungry for hours. Serves 2
